Some Unique Ways To Use Strawberries

Strawberry season is here! Go pick your own or buy at the market. Eat plain or sliced or off the vine,

in a cereal or a smoothie or with other berries topped with cream, whipped cream, yogurt or creme fraiche Search for recipes or try these. Recipe images are not exact replicas, but let them inspire your creations.



STRAWBERRY SOUP

from the kitchen of Gail Dorsey


Serves: 8

1 1/2 C water 3/4 C light bodied red wine

1/2 C sugar 2 T fresh lemon juice 1 stick cinnamon

1 quart strawberries, stemmed and pureed

1/2 C whipping cream 1/4 C sour cream Fresh strawberries cut into fans Mint Sprigs


Combine water, wine, sugar, lemon juice and cinnamon in a 3 to quart saucepan

Boil uncovered, 15 min, stirring occasionally.

Add strawberry puree and boil

Stir frequently, 10 min more.

Discard cinnamon stick and cool.

Whip cream. Combine with sour cream and fold into strawberry mixture.

Serve at cool room temperature.

Garnish with dollop of whipped cream, strawberry fan, and sprig of mint.



STRAWBERRY POPPY SEED SALAD

Refreshing Summer Salad. Easy. Deelish. Nutritious. Great way to use fresh local strawberries. Tasty compliment to a plain summer meal. Nice with fish, scallops, chicken or any grilled meat.


1 head romaine lettuce (mixed butter crunch is good, too, or whatever you have)

1 small red onion

1 pint strawberries

Wash and dry lettuce.

Slice onion.

Cut strawberries as you like. I quartered mine in chunks.


Dressing

1/2 c mayo

2 T white vinegar

1/3 c sugar (or to taste)

1/4 c whole milk (or try a substitute)

1-2 T poppy seeds (I got a small jar in Supermarket and only used 1 T. Could have used 2)


You can make this without the poppy seeds but they impart a delicious, subtle flavor and are good for you.


Toss everything well. I only used 1/2 the dressing for a large salad for the two of us.

Chill the dressing 4 hours in advance. (I forgot to do this, so I put it in the freezer for 15 minutes or so.)





STRAWBERRY SPINACH SALAD

Dressing

1/2 tsp lemon zest

2 Tbsp lemon juice

1 Tbsp vinegar (I used champagne but white or red prob fine)

1 Tbsp vegetable oil

2 tsp sugar

1 tsp poppy seeds


Salad

1 1/2 c. strawberries

1/2 seedless cucumber, score in stripes so its pretty

1/4 red onion

6 oz Spinach or baby mesclun usually use 10 oz. bag


Mix the dressing and pour it over everything else

Toast a handful of slivered almonds

Sprinkle on top, yum!





MARINATED STRAWBERRY SALAD

from the kitchen of Publix Super Market


1/2 c water

2 T sugar

1 tsp kosher salt

16 oz fresh strawberries, halved

4 sprigs fresh thyme

1/4 c apple cider vinegar

1 bag fresh baby arugula

1/4 c crumbled gorgonzola cheese

2 T balsamic glaze


Heat water til hot

Stir in sugar and salt

Let sit until dissolved

Let stand 5 minutes until slightly cooled

Halve strawberries

Place strawberries, thyme, vinegar, sugar water

Toss to coat

Cover and chill 20 minutes or up to 1 hour stirring occasionally

Place arugula on serving platter

Top with strawberries and cheese

Drizzle with 1 T marinade mixture and glaze

Serve




STRAWBERRY SODA

adult version with vodka


simmer 2 cups of sugar,

1 cup of water and

1 dozen sliced strawberries

until the strawberries break down...about 10 minutes.


strain the syrup and cool.


add 1 or 2 Tablespoons to a glass and top with cold seltzer water For an adult kick, add vodka.





CHOCOLATE COVERED STRAWBERRIES



melt 6 oz semisweet chocolate OR 16 oz milk chocolate chips

wash and dry well 1 pound strawberries with stems

line a sheet pan with parchment or waxed paper

dip the strawberries into the chocolate,

twist slightly and remove letting excess chocolate fall back into the bowl or pan

set strawberries aside on parchment paper until chocolate sets, about 30 minutes.
